Lemon Spiral Biscuits

You will need for 20 biscuits:
150g Icing Sugar
300g Butter
1 Lemon/Lemon flavouring
400g Plain Flour
2 Tablespoons of Milk
Pink/Your choice of food dye


Method

1. Mix the butter and icing sugar together until the mixture is smooth and creamy.
2. Grate the rind of a lemon using the small holes of the grater however I would recommend using lemon flavouring as the taste is stronger after the biscuits have been baked.
3. Then sift the flour, add the lemon rind and milk.
4. Put half the mixture into another bowl and add the dye until it is completely your chosen colour.
5. Make both the mixtures into rough balls of dough and wrap them in food wrap/cling-film to then put in the fridge for 30 mins or freezer for 10
6. Sprinkle flour and roll out the plain dough until it's about 25 x 15cm and 5mm thick.
7. Repeat this with the different coloured dough and then lightly brush some water on top of the plain dough. Now lift the different coloured dough on top.
8. Use a sharp knife to make the edges straight and roll it up along the long side.
9. Heat the oven to 180 degrees/gas mark 4. Wrap it up again and put it back in the freezer for another 10 mins.
10. Take the dough out and cut the biscuits into 5mm slices and place them on baking trays. Bake them until golden.
